Refining cellars with observation point

Alternatively, you can watch the Prosciutto Crudo Piora while it ages at almost 2,000 meters in one of the 3 cellars near Lake Ritom and Lake Cadagno.

The observation point of the aging cellar in Cadagno is open to the public and free access from June to September, thanks to two small windows that allow you to observe the aging process of Prosciutto Piora from the outside. It is in fact in this important phase that the scents of the pure mountain air give the ham its softness, rosy colour, sweetness and refined hazelnut note.

The aging cellar is located west of Lake Cadagno, in the heart of the Ritom-Val Piora Region, and is easily accessible thanks to the hiking trails that run along Lake Ritom or down from Lake Tom. The other two ageing cellars are located on the Alpe Piora, south-east of the lake and close to the famous cheese factory of the famous Formaggio Piora and the Cadagno hut. These are not open to the public due to accessibility restrictions.
