Sonja Eicholzer has lived in a small village named Vellano since 1988. Vellano is located in the beautiful Morobbia valley at the altitude of 800m. In this natural, pristine scenery, Sonja passionately plans and tends her garden. Year after year, she is proud to harvest 100% natural and healthy garden products, which are protected against pests only with natural tinctures.
Sonja produces her own fertilizer which by simply composting the garden waste in a small four-chamber compost facility. This process closes the cycle of the nature.
With her garden products, Sonja cooks jams and jellies from all sorts of fruits, even from scented rose garden leaves. She gelatinizes the jams and jellies with apple pectin and with as little sugar as possible to allow the fruits to express their full flavor and sweetness. The products aer finally preserved by the process of hot filling.
Sonja’s regular customers also love her dried and marinated tomatoes, fresh ground tomato sauce, basil pesto, herb butter, herbal salts, vinegars, various chili products, various syrups and the exquisite Americano grape juice.
She only uses the finest ingredients for all her products. Pesto, as an example: the basil is harvested from her garden at lunch time, each leave hand-picked, then carefully pounded with pine nuts, garlic and cold-pressed olive oil.
