Cantina Rubio

The cellar is located at the Salorino cellars, which are grouped together in one area at the entrance to the village. They are characterised by a central entrance door with an air intake window and are particularly cool: they keep 8-9° in summer and 10-11° in winter.

The white grapes are harvested and selected by hand, a light maceration takes place in steel barrels; alcoholic and malolactic fermentation in barriques at 16°. The wine remains for 6/8 months in barriques until bottling.

The red grapes are harvested and selected by hand, a 20-day maceration in steel vats takes place, after malolactic fermentation the wine matures for 15 to 30 months in medium toasted barriques

Muscino: The Rubio winery's historic vineyard was planted in the late 1970s, on an area of 1.4 hectares, on the hill of Muscino, a hamlet of the commune of Castel San Pietro. Its 2000 vines include grapes of the Merlot, Cabernet, Petit Verdot and Chardonnay varieties.

Albio: The vineyard is located in the hamlet of Albio in the municipality of Castel San Pietro. With an excellent south-southeast exposure. 100% of it is dedicated to the cultivation of Merlot.

Rancate: The 350 Chardonnay vines were planted in 2013. The vineyard is located in the Rancate district of the municipality of Mendrisio.
