Tortelli di S. Giuseppe (St. Joseph's "donuts" prepared in honor of St. Joseph's Day March 19 )
- 4 dl of water
- a pinch of salt
- a piece of butter
- 150g of flour
- 6 eggs
- chopped lemon peel
Boil the water with salt, add the flour stirring continuously so that it doesn't form clumps. Break the eggs one by one and add them to the dough (which has been removed from the heat), stirring well. Add the lemon peel and a little glass of Cognac. Heat the oil and drop teaspooon size pieces of dough into it, with the aid of 2 teaspoons. Yeast is not necessary. Sprinkle them with powdered sugar.
The tradition tortelli di San Giuseppe, are now also common at carnival, in many variations.
