The Ticino table will be moderated by wild herb pioneer Meret Bissegger and food scout Dominik Flammer.
Spontaneous menu from the mountain meadows of Switzerland: Mariagrazia Marchesi, a lover of cooking with wild herbs, will prepare a menu all based on herbs and flowers that nature gives us.
The first course will be a meadow salad with caramelized walnuts, seasoned with a vinagrette with elderflowers, followed by pizzoccheri, a specialty native to Valtellina, where the Saracen combines wild herbs giving a new flavor and ancient at the same time. Finally, the dessert will be an all-green chocolate salami, where the main ingredient is dandelion.
