Roast Kid - The recipe

Melt a piece of butter and some oil, add the pieces of goat meat and brown them well on both sides. Pour over 1/2 cup of Marsala and sprinkle them with sage and finely chopped rosemary. Add a little water so that it doesn't burn, and let it cook for about an hour and a half.

Prepared in the oven or on the stove, kid was always served at Easter.
